“ This charming Italian trattoria was a delightful surprise! They even accommodated our last-minute phone booking on Australia Day. We began our meal with a refreshing bottle of Prosecco, followed by a delectable carbonara pasta dish. The pork and fennel sausage pizza was an absolute mouthwatering treat. The pizza crust struck the perfect balance—thin and crispy, ideal for savouring by hand. It reminded us of the authentic Roman pizzas we had during our trip to Rome. While the carbonara was tasty, they unfortunately ran out of bucatini pasta. However, they graciously substituted it with spaghetti. Although the flavours were still great, the pecorino and egg sauce had a slightly watery consistency compared to our preferred thicker version. We prefer a heavier cheese and egg yolk punch. Nevertheless, this is merely a matter of personal preference. The guanciale was cooked to perfection—the fat rendered smoothly without overcooking the pork pieces. It’s puzzling why other Italian restaurants these days cook guanciale too crispy, but these guys got it just right. Overall, this fantastic Italian joint is definitely worth a visit! ”
